Feeding a Picky Toddler

Toddler’s can be downright impossible to feed sometimes. Not always the case for some- but when it comes to my son I have to pull out all the creative juices.

In my quest to feed my super-picky 17mo old a snack- I decided to give variety a try. If I offer any one snack he’ll take a bite (if I’m lucky) and be “all done”. I know one day he’ll eat me out of house and home, but today I just want him to find a few things he likes.

I grabbed an Ikea ice cube tray and began filling each spot with a different snack from the panty- that he already has easy access to, but doesn’t eat. I also threw in some fruit in the leftover spots.

Top Row: Veggie Straws, Annie’s Bunny Snacks, Archer Farms Freeze Dried Apple
Middle Row: Earth’s Best Organic Crunchin’ Crackers, Snapea Crisp’s, Happy Baby Organic Freezedried Yogurt
Bottom Row: Red Grapefruit, Annie’s Bunny Grahan’s Dehydrated Cherries

Needless to say- it was a hit! He gobbled most of it up! A few things he spit out, but overall I’m glad he tried!

Recipe Corner: Brie with Fresh Raspberry

I was home for Christmas and my mom made this amazing appetizer, Brie with Fresh Raspberry.  Amongst all the others, this yummy treat stood out to me so much that I had to share! I hope you love it as much as I do! This would be a great finger food at a baby shower, birthday party, or any celebration/ get together where you want to impress your guests! With just 3 ingredients this is a no-fail recipe!

Ingredients:
5oz. Brie cheese
15 Athens Mini Fillo Shells (Wal-Mart sells these)
15 Fresh raspberries

In a food processor, pulse Brie cheese (including rind) until smooth. Spoon 1 rounded teaspoon of Brie into each Fillo Shell. (Mom used an icing bag to squeeze the cheese into the shells) Bake in preheated oven for 5 minutes or just until cheese is melted. Top with one raspberry.

Serve warm. Enjoy!

Sushi for Kids- A Fun Healthy Snack

Ok so we wouldn’t actually feed our little ones raw fish, but wouldn’t it be fun to pretend while eating a fun sushi concoction made from peanut butter, bread and your favorite fruit and snack fillings? Here is all you’ll need to make an exciting healthy snack for your kids.

Ingredients:
2 slices of bread (preferably whole wheat)
Peanut butter (Naturally More)
Snap Pea Crisps
Pear
Banana
Raisins

1. Trim the crust off your favorite bread, then slice in half. Gently use a rolling pin to flatten each piece.

2. Spread peanut butter over one side of the bread.

3. Add sliced fruit, veggies & crunchy snacks. Lay slices horizontally to create the best-looking pieces.

4. Gently roll the bread forward to create a sushi roll

5. Enjoy!
